You need good gear to be able to stretch your warrior and cover all the bases. Essentially, you need to have your strength in the 90's or above and your dex anywhere from 100 to 121 if you want to equip top level gear. And as you noticed, trying to meet those stiff requirements also means you will have much less health, etc. The only way to meet those holes is through mods on your gear. So for my dual wield warrior, I pumped my strength to about 96 so that I could wear top end strength armor (after 10 pts in heavy lifter). I then equipped pieces of armor that also boosted my dex about 30-40points allowing me to equip top end or near top end daggers. I also chose gear that had a number of +150 hp mods on them. So with gear on, I had a strength around 110, dex at 121, and left untouched endurance and mana. My hit points are around 2000 and my mana is around 700. My guy does fine in legend+ although this kind of build is very micro-managing intensive since you want to constantly have invigorating aura and war cry active. I do about 1000 damage normally per spin and can spin about 8 times before I run out of mana. There are better dual wielders out there, soularc for instance. But the key to all warrior dual wields at level 75 is having a wide selection of gear to meet all those needs.
